Ings:
  • 1 cup APF/ 120g
  • 1/4 cup icing sugar (25g)
  • 120g butter or 1/2 cup
  • 1tsp vanilla extract
PROCEDURE:
  1. Cream the butter, icing sugar and vanilla extract using hand mixer for 5-8 mins until light in color and fluffy in texture.
  2. Sift the flour 1/3 at a time folding it gently and mix into the cream butter using spatula scrape the dough at side of the bowl.
  3. Transfer the dough to a sheet of plastic wrap and roll it to form a log. Cut the edge and put in the piping bag.
  4. Piped the dough in a baking sheet with parchment paper or if you don’t want to pipe just simply roll a small portion of dough and press it with fork. Refrigerate for 30 mins.
  5. Bake in preheated air fryer 150 degrees celsius for 15 mins or until the edges turn in golden color.
  6. Remove from the air fryer and leave the cookies to cool for 10 mins and put on air tight container.

Notes:
  • The pipe dough can be frozen overnight or up to 1 month before baking. Only add 5mins more of baking time to the frozen dough.
  • Sugar in the dough becomes more pronounces as it chills creating a better flavored bake.
  • Icing sugar is used because it dissolves quickly when mixed with butter and also gives light crisp and melt in your mouth texture to the cookies.
  • Take out the butter at least 1 hr before baking should be soft to touch but not melted.
  • If icing sugar is not available you can make your own by simply grinding 1 cup of granulated sugar and 1 tbsp of cornstarch using spice grinder or blender.
End....
