ingredients:
Cream Cheese Filling:
3/4 cup or 100 grams cream cheese
1/4 cup 25 grams caster sugar or icing sugar
1 egg yolk
Cream Cheese Cake:
1/3 cup or 40g cream cheese
1/4 cup or 60g unsalted butter
1/3 cup or 80g caster sugar
2 whole eggs
3/4 cup or 100g cake flour ( i used 3/4 cup all purpose flour minus the 2tbsp and add 2 tbsp of cornstarch sifted together)
1/2 tsp baking powder
Procedure:
- Cream cheese filling: cream together the cream cheese and sugar then add the egg yolk until well combines and smooth in consistency. Put on the piping bag and set aside.
- For the cheese cake: whisk together the butter, cream cheese and sugar until smooth.
- Add the 2 eggs and whisk.
- Sift together the flour and baking powder to the mixture and mix until well combined.
- Pipe the cheese cake mixture in the prepared muffin pan brushed with butter.
- In the center of each prepared cheesecake in the muffin pan pipe in the cream cheese filling.
- Baked at 170 degrees celcius for about 15-18 mins depends on your AF.
