Cream Cheese Muffins

CREAM CHEESE MUFFINS

ingredients:
Cream Cheese Filling:
3/4 cup or 100 grams cream cheese
1/4 cup 25 grams caster sugar or icing sugar
1 egg yolk

Cream Cheese Cake:
1/3 cup or 40g cream cheese
1/4 cup or 60g unsalted butter
1/3 cup or 80g caster sugar
2 whole eggs
3/4 cup or 100g cake flour ( i used 3/4 cup all purpose flour minus the 2tbsp and add 2 tbsp of cornstarch sifted together)
1/2 tsp baking powder

Procedure:
  1. Cream cheese filling: cream together the cream cheese and sugar then add the egg yolk until well combines and smooth in consistency. Put on the piping bag and set aside.
  2. For the cheese cake: whisk together the butter, cream cheese and sugar until smooth.
  3. Add the 2 eggs and whisk.
  4. Sift together the flour and baking powder to the mixture and mix until well combined.
  5. Pipe the cheese cake mixture in the prepared muffin pan brushed with butter.
  6. In the center of each prepared cheesecake in the muffin pan pipe in the cream cheese filling.
  7. Baked at 170 degrees celcius for about 15-18 mins depends on your AF.
  8. Served and enjoy 😋
