Brazo de Mercedez Cupcake
Serving: 6 cupcakes
Ingredients:
Custard:
5 egg yolks
1/4-1/3 condensed milk (depends on your tastebuds๐)
1 tsp vanilla essence
Meringue:
5 egg whites
1/4 tsp cream of tartar or 1/2 tsp lemon juice (susbstitute)
6 tbsp sugar
1 cup flour (optional)
1 tsp cornstarch (optional)
1 tsp baking powder (optional)
Procedure:
- In a pan using low heat, mixed together egg yolks, condensed milk and vanilla until it become viscous in consistency. (Custard) set aside.
- For the meringue in separate bowl (dont use plastic instead use glass bowl to achieve perfect stiffness or peak) Using hand mixer mix until become frothy and add the cream of tartar or lemon juice.
- Gradually add the sugar and beat/mix again until stiff and add again the remaining sugar then beat/mix until you achieve the perfect peak of the meringue.
- Note: As I made my version since I didnt achieve the perfect peak of the meringue ( in short a little failure ๐คฃ) but don’t worry it can still be a delicious and yummy brazo de mercedez cupcakes ๐.
- Optional: in a separate bowl prepare flour, cornstarch and baking powder. Pour in the not so perfect meringue and fold until its is thoroughly mix.
- Prepare the muffin pan with cupcake liner or cupcake paper cups and pour in the meringue mixture then drop the custard filling in the middle of every mixture. (You can also put the meringue and the custard in a piping bag to make a beautiful designed cupcakes ๐)
- Preheat the airfryer at 180 degrees celcius.
- Cook at 180 degrees celcius for 10-15 mins (depends on your airfryer so watch out and do the toothpick test)
- Let it cool and serve ๐๐๐
Note: You can double the measurments or triple as you want if you want to make more than 6pcs. You can also use oven instead of air fryer ๐.
