CREAM CHEESE FLAN RECIPE
Ingredients:
1 cup granulated sugar
8oz cream cheese
5 large egg at room temperature
2 tsp vanilla extract
12 oz evap milk or 1 can
14 oz condensed milk or 1 can
Procedure:
- In small saucepan add sugar and melt over low medium heat, stirring occasionally until golden.
- Remove from heat and pour the caramel into the bottom of each prepared pans. Swirl pan to spread evenly.
- In a large bowl, mix cream cheese using hand mixer until smooth.
- Add eggs one at a time, vanilla extract, evap milk, and condensed milk. Mix well until well combined.
- Skim off the foam using spatula.
- Pour the mixture in the prepared pan with caramel.
- Prepare the steamer.
- Loosely cover each pan with foil, and steam for about 1 hr or less depends on the toothpick test.
- Remove and let it cool. Cover and refrigerate for at least 4hrs.
- Unmold by running a knife on the edges and invert onto serving plate and serve.
Notes:
- Make sure that the caramel has already cooled down before pouring the mixture.
- Cover with foil to prevent dropping of water vapor from the steamer
- Do the toothpick test to know if it is done.
