Cream Cheese Flan



CREAM CHEESE FLAN RECIPE

Ingredients:



1 cup granulated sugar
8oz cream cheese
5 large egg at room temperature
2 tsp vanilla extract
12 oz evap milk or 1 can
14 oz condensed milk or 1 can

Procedure:
  1. In small saucepan add sugar and melt over low medium heat, stirring occasionally until golden.
  2. Remove from heat and pour the caramel into the bottom of each prepared pans. Swirl pan to spread evenly.
  3. In a large bowl, mix cream cheese using hand mixer until smooth. 
  4. Add eggs one at a time, vanilla extract, evap milk, and condensed milk. Mix well until well combined.
  5. Skim off the foam using spatula.
  6. Pour the mixture in the prepared pan with caramel.
  7. Prepare the steamer.
  8. Loosely cover each pan with foil, and steam for about 1 hr or less depends on the toothpick test.
  9. Remove and let it cool. Cover and refrigerate for at least 4hrs.
  10. Unmold by running a knife on the edges and invert onto serving plate and serve.




Notes:
  • Make sure that the caramel has already cooled down before pouring the mixture.
  • Cover with foil to prevent dropping of water vapor from the steamer
  • Do the toothpick test to know if it is done.
