Mini Banapple Pie in Air Fryer

Today is our 5th year wedding anniversary. Since we are still on a lockdown and no reason to go out, I am thinking of a food to cook that will be perfect for our coffee date 😂. I saw 3 old apples 🍎 on our table and bananas... hmmm 🤔 a banapple pie will best suits our cravings 😋...

I made a pie dough from scratch , if you still remember the crust from my mini egg pies just double the measurements to make 6 banapple pies in a muffin pan and 1 banapple pie on my mini springform pan that best fits in my air fryer 😉.

I like the buttery taste of the crust not too sweet and the combination of apple and banana is just truly a perfect blend.
Do not overcook the filling because the crunchiness of the apple makes it more delicious together with the walnuts.😋

Recipe as follows....



Banapple Pie with Wallnuts Recipe
Ings:
Crust
8oz butter cut into cubes and freezed
2 cups APF
1 tsp salt
2 tbsp sugar
1/4 cup cold water

Fillings:
3 apples peeled and chopped (not finely)
1 bananas chopped
1/4 cup white or brown sugar
1 tsp vanilla essence
2 tbsp cornstarch
4 oz butter
1/2 tsp lemon juice

Procedure:

1. Cut butter into small cubes and freeze for 30mins-1hr

2. In a bowl, whisk together flour, salt and sugar and 

chill in the fridge for about 30mins.

3. Using food processor put together the flour mixture and the butter cubes. Mixed together until polvoronlike mixture is formed.

4. Slowly drizzle the cold water to the mixture  and mix again until you form a dough.

Note: do not add too much liquid and do not over work the dough.

5. Wrap the dough using plastic wrap and chill in the fridge for 1-2 hrs.

6. In separate bowl, mix together chopped apple, bananas, lemon juice, sugar, cornstarch and vanilla

7. In a pan using low heat, melt the butter and then put the mixed apple and bananas, cook until soft and brownish in color, then let it cool. Do not overcook.

8. Divide the dough in small ball and flatten each dough 

using rolling pin while in between 2 parchment paper.

9. Spray the muffin pan with oil and put the flattened 

dough in the muffin pan press and remove excess.

10. Put on the banapple filling just enough and add wallnuts.

11. Put another flattened dough on top to cover the filling and press the side with fork to seal it. Brush the top of the pie with egg wash.

12. Bake in air fryer at 200 degrees centigrade for 20-25 mins until crust is golden.

13. Remove and allow to cool then serve 😋😋😋
